Their nightly payment to their respective mommies are "Commission" from their tips. I.E. Sitting fee of RMB300.00, RMB50.00 will be paid to the mommy. ST/LT of RMB1,100.00 = RMB150.00 to 200.00 depending on which KTV. The higher the meimei charges for ST/LT tips, the mommy will get more. To paint a clearer picture for you, in a good and legit saying, she is like a sales person selling her goods which in this case, their goods are female bodies. Some people might have called these mommies OKTs' and in the worst case, the mommies are blood suckers.
What you are really wrong about is - These meimei actually DO pay a monthly payment of/from RMB30.00 (NTY) to RMB800.00 (Hui Hua/Ming Zhu). With this payment, they are ensured of their right to work in the KTV of their choice. When a new set of uniform is introduced, each individual meimei/WG MUST pay for it, other their working permit there will be revoked. Some other things that some KTV charges their money attracting products are:
1) Lockers
2) Name tags/Photo taking
3) Festive attire/costume like X'mas hats
4) Festive toys
5) Glasses/Jugs damaged by the meimei
6) Mandatory purchases of Mooncakes Vouchers
7) Meals/Buffets vouchers in their hotel Coffee house/Restaurant
8) Some even have duties to make KTV Rooms bookings, no room fine RMB100.00. Each meimei made to book a room/month
9) There are probably more but these are all that I know of.

Loop Holes - I think what you are asking is, if you call a meimei/WG and asked her to do an OT with you. It's like an escort service. She will probably meet you around or in the afternoon, meaning before she goes to work. If this is the case and depending on the days of the week. She do not have to inform their mommy, does she? It is like you have some friends who ask you to go to JB but you do not want to apply leave, so what do you do? You will probably go see a doctor and get a MC.
Some mommies, charges their girls OT fee/commission on Thursday, Friday and Saturdays regardless their valid reason for not turning up for work unless leaves are applied beforehand. So, like in everywhere, there are many grey areas and loop holes to be exploited. In most KTV's, those meimei/WG with permanant work permits actually has monthly leaves of 4-5 days plus during the menses period. In summary, it all depends on the KTV they work in. Nothing is absolute.
Back to your main question - Answer is very simple and I do not think you need to tell her what to do. When she meets you somewhere else other than the KTV she work in, NORMALLY, she will not inform their mommies that she is seeing a Customer. She would probably tell her she is on leave, do not feel like working because of fatigue, reletives are visiting or vice versa, 'sisters' need their help to go for an abortion, somebody dear to her is sick, water is faulty and the repairman is there to fix it,,,,,,,,,,,,,,ETC ETC ETC excuses.
